English muffins recipe: Sandwich presentation

De cand ma stiu am fost fascinata de aluat. Cand eram mica, tin minte ca stateam langa mama cand framanta aluat pentru placinta sau gogosi, rupea o bucatica si-mi dadea sa framant si eu ❤️.

De-a lungul timpului am incercat tot felul de aluaturi: cozonac, pizza, foietaj, gogosi. Cateodata au iesit, uneori nu prea 😀 , dar mereu am vrut sa incerc retete noi. Si asa am dat peste English muffins. Bine, nu chiar asa, nu a fost o intamplare. Le-am descoperit la McDonalds 😆 , la breakfast. Iar din dorinta de a manca mai sanatos am decis sa recreez minunatul ‘sausage mcmuffin’ de la zero la mine in bucatarie.

Desi usor scentica de faptul ca se coc in tigaie pe foc, am fost impresionata de rezultat, briosele au iesit pufoase si super gustoase. Am facut putin aluat, cam jumatate dintr-o portie normala, in caz de esec sa nu irosesc prea multe ingrediente si timp 🙂 .

Ingrediente

  • pentru 7 briose
  • 180g faina

  • 1 lingurita drojdie uscata

  • 90 ml lapte

  • 60 ml apa

  • 25g unt

  • 1 ou mic

  • 1/2 lingurita sare

  • 1 lingura zahar

  • malai

Instructiuni

  • Am pus laptele, apa, zaharul intr-o cratita pe foc mic si am amestecat pana s-a topit zaharul. (Atentie sa nu dea in foc, daca il incalziti prea tare, trebuie lasat deoparte la racit). Am adaugat drojdia si am lasat deoparte cateva minute pana cand drojdia s-a activat.
  • Dupa ce drojdia s-a activat, am adaugat peste compozitie oul si untul topit si am mixat pana cand s-au omogenizat ingredientele.
  • Intr-un bol am adaugat faina si sarea. Deasupra am adaugat amestecul lichid si am mixat aproximativ 8-10 minute pana cand aluatul a devenit elastic si lucios. (Aluatul este moale, don’t panic, asa trebuie sa fie).
  • Am acoperit bolul cu folie de plastic si am lasat la dospit o ora. (Pentru dospit eu incalzesc cuptorul la 40°C si introduc bolul in cuptor; astfel ma asigur ca nu este diferenta de temperatura in camera incat sa afecteze dospirea aluatului).
  • Dupa ce aluatul si-a dublat volumul, l-am trasferat pe blatul de lucru pe care am presarat putina faina. l-am framantat foarte putin si l-am intins cu mainile cat sa aiba o grosime de 1cm.
  • Am folosit un pahar pentru a taia aluatul in forme rotunde. Am transferat cercurile intr-o tava presarata cu malai si am presarat malai si deasupra lor.
  • Am acoperit tava cu un prosop curat si am lasat la dospit inca 30 minute.
  • Le-am copt pe foc, intr-o tigaie teflonata cu capac, fara ulei. Le-am lasat aproximativ 5 minute pe fiecare parte la foc mic. (Dupa fiecare tura de copt, curatati tigaia de malaiul ars).

Ingredients

  • for 7 muffins
  • 180g all-purpose flour

  • 1 tsp instant yeast

  • 90 ml milk

  • 60 ml water

  • 25g butter

  • 1 small-sized egg

  • 1/2 tsp salt

  • 1 Tbsp sugar

  • cornmeal

Directions

  • In a saucepan, combine the milk, water and sugar and warm at low-heat. Set aside and add the yeast, leave it for a few minutes so the yeast would activate.
  • After the yeast activated, mix the egg and melted butter into the milk mixture.
  • In a medium size bowl, combine the flour and salt. Pour the milk mixture into the flour while mixing on low speed. Mix for about 8-10 minutes until the dough is elastic and smooth.
  • Cover the dough with plastic and set aside for an hour, to double in size.
  • Transfer the dough to the floured counter, pat down and spread out until it’s about 1cm thick.
  • Use a round cutter (or a round glass) to cut the muffins. Transfer them to a baking tray powdered with cornmeal. Sprinkle some cornmeal on top of the muffins as well.
  • Cover the tray with a clean kitchen towel and set aside for about 30 minutes, to rise.
  • Place a frying pan or skillet over low heat. Place the muffins and bake 5 minutes on each side. (Clear the old cornmeal off the pan before adding the new muffins).
