
Rar fac inghetata si de data asta m-am surprins si pe mine ca am ales o varianta fara ciocolata. 🫣
Cum ziceam si in alte articole, obiectivul anul acesta este cresterea cantitatii de proteine in alimentatie. Asa ca am ales sa fac o reteta de inghetata proteica din branza cottage si, ca sa fie intr-adevar un desert sanatos, am exclus cu totul zaharul rafinat. Rezultatul este o inghetata de casa cremoasa, indulcita cu miere naturala si curmale, perfecta pentru zilele calde.
Eu nu sunt mare fana a inghetatei, nu e desertul preferat, insa din cand in cand mi se face pofta. Preferata mea dintotdeauna este Häagen-Dazs cu Brownie. Are ceva in comun cu inghetata copilariei mele, acel gust intens de cacao. Ma gandesc sa recreez si aceasta varianta la un moment dat, care cu siguranta nu va fi o inghetata fara zahar sau o reteta tocmai fit. 😁

De ce o sa-ti placa aceasta reteta:
- Are putine ingrediente, toate naturale. Fara emulsificatori, stabilizatori sau aditivi ascunsi. Doar ingrediente simple, pe care probabil le ai deja in casa.
- Nu necesita aparat de inghetata. Este o reteta incredibil de simpla, care nu cere echipamente speciale. Textura cremoasa se obtine doar cu ajutorul unui blender iar spargerea cristalelor de gheata se face cu un mixer. 😉
- Este bogata in proteine si fibre. Branza cottage si iaurtul grecesc aduc un aport serios de proteine, in timp ce curmalele vin la pachet cu fibre si nutrienti. Este un desert proteic excelent dupa antrenament sau ca gustare rapida.
- Este o inghetata fara zahar rafinat. Dulceata vine din miere si din caramelul de curmale.
- Textura surprinzator de fina. Daca te ingrijoreaza gandul ca vei simti textura branzei, blenderul isi face bine treaba aici. Devine atat de fina si matasoasa, incat nimeni nu o sa ghiceasca din prima ingredientul secret.



Ingrediente principale pentru inghetata proteica de casa:
- Branza cottage: Este baza acestei retete, cea care face inghetata sa fie mai bogata in proteine si mai satioasa. Eu am folosit President Branza Cottage fara Lactoza, perfecta pentru o textura fina si usoara pentru digestie.
- Iaurt grecesc: Adaugat special pentru cremozitate. Alegerea mea a fost Olympus Protein 0%, un iaurt dens care pluseaza la capitolul macronutrienti fara sa adauge grasimi in plus bazei.
- Curmale deshidratate: Vedeta din caramelul sarat. Au o dulceata naturala, note de zahar ars si sunt bogate in fibre, fiind inlocuitorul perfect pentru zaharul rafinat.
- Miere: Ajuta la stabilizarea bazei de branza in congelator si aduce o aroma florala subtila. Foloseste o miere lichida, de calitate si ajusteaza cantitatea dupa plac.
- Nuci pecan: Intr-o inghetata de casa, textura face toata diferenta. Nucile pecan aduc un gust untos, profund si un contrast crocant in combinatie cu caramelul.
- Tonka: Este ingredientul surpriza din reteta. Aduce note de vanilie, migdale si caramel.
Daca ai incercat deja reteta mea de inghetata cu banane si iaurt, stii bine cat de mult imi place sa transform deserturile clasice in variante sanatoase si fara zahar rafinat. De data aceasta am mers un pas mai departe cu un aport mai ridicat de proteine si cu un profil de arome mai complex, datorita boabelor de tonka. Gasesti mai jos reteta detaliata, pas cu pas, gata de salvat sau printat pentru cand vrei sa prepari aceasta inghetata proteica de casa.

gO reteta de inghetata proteica de casa, cremoasa si fara zahar rafinat, realizata simplu, in blender. Baza fina din branza cottage si iaurt grecesc este completata perfect de un caramel sarat din curmale, nuci pecan crocante si parfumul exotic de tonka. Un desert echilibrat si bogat in proteine, ideal pentru o gustare plina de nutrienti.
Ingrediente
- Baza de branza
300 g branza cottage
70 g iaurt grecesc
o lingura miere (25 g)
1/2 lingurita tonka pudra
- Caramel sarat
150 g curmale deshidratate, fara samburi
50 ml apa
100 ml lapte
un praf de sare
20 g nuci pecan coapte si tocate grosier
Instructiuni
- Pregatirea bazei
- Se pune in blender branza cottage, iaurtul, mierea si tonka si se mixeaza 1-2 minute pana devine complet fina.
- Se toarna compozitia intr-o caserola si se da la congelator pentru 3 ore.
- Pregatirea caramelului
- In acest timp se pregateste caramelul. Intr-o cratita mica se pune 50 ml apa si 150 g curmale fara samburi si se lasa la foc mic timp de 10 minute.
- Se acopera vasul cu un capac si se lasa deoparte timp de 20 minute. In acest timp curmalele vor absorbi toata apa si se vor hidrata.
- Se pun intr-un blender, se adauga un praf de sare de mare sau Himalaya si se mixeaza pana devine o crema fina. Se adauga aproximativ 100 ml lapte cat sa se subtieze compozitia pana capata o textura mai fluida, ca a unui sos legat de caramel.
- Se da la frigider sa fie cat mai rece pana se asambleaza cu baza.
- Pregatirea nucilor
- Nucile pecan se pun la copt in cuptorul preincalzit la 170°C timp de 5 minute.
- Cand sunt gata, se scot si se taie grosier cu un cutit.
- Asamblarea
- In cele 3 ore cat baza inghetatei sta la congelator, se scoate si se mixeaza compozitia cu ajutorul unui mixer de 2-3 ori (cam o data la fiecare ora). Pasul acesta previne formarea cristalelor de gheata.
- Dupa ultima mixare, se adauga compozitia de curmale (minus 2 linguri) ,nucile pecan (minus o lingura) si se amesteca foarte putin (eu am folosit o scobitoare sa amestec caramelul in baza de branza, incat sa nu se omogenizeze cu totul).
- Se da la congelator pentru inca 3 ore.
- Servirea
- Cand inghetata s-a intarit, se scoate si se lasa 10-15 minute pe blatul de bucatarie sa se inmoaie putin.
- In acest timp se face un sos de caramel din cele 2 linguri de amestec de curmale pastrate de la inghetata. Se adauga lapte pana se ajunge la consistenta dorita incat sa curga pe inghetata.
- Se ia inghetata cu lingura speciala si se toarna in cupe / pahare / cani. Se adauga sosul de curmale deasupra si cateva bucati de nuci pecan.
