
In fiecare vara mama ne gatea de multe ori ceea ce noi numeam simplu „mancare cu rosii si ardei”, o reteta simpla, facuta din legumele proaspete din gradina: rosii, ardei si ceapa. Multi ani mai tarziu aveam sa descopar ca acest preparat seamana surprinzator de mult cu shakshuka, celebra reteta cu oua in sos de rosii si ardei.
Pe atunci nu stiam nimic despre shakshuka sau despre originile ei. Pentru noi era pur si simplu mancarea verii; se facea rapid, se manca si mai rapid, si avea acel gust pe care nu-l uiti usor.
Astazi, shakshuka a devenit una dintre retetele mele preferate pentru mic dejun sau brunch, mai ales in weekend, cand avem timp sa ne bucuram de un mic dejun mai lenes. Se face rapid, intr-o singura tigaie, dar este genul de preparat care merita savurat pe indelete, alaturi de o felie de paine proaspat prajita. 😉
De ce o sa-ti placa aceasta shakshuka:
- Se face intr-o singura tigaie, deci speli mai putine vase. 😁
- Ingredientele sunt simple si accesibile.
- Este un mic dejun satios, bogat in proteine si legume.
- Este foarte versatila: merge perfect vara cu rosii proaspete, dar si iarna cu rosii la conserva de calitate.
Ingrediente pentru shakshuka cu oua in sos de rosii:
- Rosii: Rosiile de gradina, bine coapte, fac diferenta intre o shakshuka buna si una excelenta. In afara sezonului, poti folosi fara probleme rosii cuburi la conserva, in suc propriu.
- Ardei: Ardei capia sau ardei gras rosu, pentru un gust usor dulce si o culoare intensa a sosului.
- Ceapa si usturoi: Baza aromatica esentiala pentru orice mancare.
- Oua: Proaspete, de preferat de tara sau ecologice (cod 0 sau 1), pentru un galbenus cremos si intens colorat.
- Condimente de baza pentru shakshuka: Chimion (cumin), boia dulce sau afumata, sare, piper negru si fulgi de chilli, in functie de cat de picant iti place.
- Ulei de masline: Pentru a sota legumele si a elibera aromele condimentelor.
- Pentru servit (optional, dar recomandat): Branza feta sfaramata, patrunjel sau coriandru tocate marunt, si avocado.

Sfaturi utile pentru cea mai buna shakshuka de casa
Daca vrei sa iti iasa preparatul exact ca in restaurantele tale preferate de brunch, iata cateva secrete de care sa tii cont:
- Lasa sosul sa fiarba suficient: Secretul unei shakshuka bune este rabdarea. Sosul de rosii si ardei trebuie gatit la foc mic, pana scade si devine gros si aromat. Daca te grabesti, vei obtine un sos apos si mai putin intens.
- Cum reduci aciditatea rosiilor fara zahar: Daca rosiile folosite sunt prea acide, exista un truc de profesionist mult mai bun decat clasicul zahar: bicarbonatul de sodiu. Adauga un praf foarte mic de bicarbonat (cat iei cu doua degete) in sosul care fierbe. Sosul va face putina spuma imediat. E un semn bun, inseamna ca bicarbonatul reactioneaza direct cu acidul si il neutralizeaza chimic, fara sa schimbe aroma mancarii si fara sa o indulceasca artificial. (Am invatat acest truc de la „Chefi la cutite” si chiar l-am testat sa vad ca intr-adevar functioneaza.😉)
- Secretul meu pentru oua perfecte: Desi reteta clasica gateste ouale direct in sos, eu prefer sa folosesc oua posate, adaugate la final. Asa obtin mereu textura perfecta: albus ferm si galbenus moale si cremos.
- Ce tigaie sa folosesti: Desi multa lume recomanda fonta pentru shakshuka, daca ai o tigaie din fonta clasica, neemailata, este mai bine sa o eviti. Rosiile sunt foarte acide si pot patrunde sub stratul protector de grasime al tigaii, oferind mancarii un gust metalic. Pentru a elimina acest risc, foloseste o tigaie de inox sau una din fonta emailata. (Eu in pozele din articol folosesc o tigaie de fonta simpla, insa am ales-o doar din punct de vedere artistic, pentru ca arata foarte bine in fotografii! In realitate, gatesc aceasta reteta intr-o tigaie de inox.)
De fiecare data cand gatesc shakshuka, imi aminteste de mancarea cu rosii si ardei pe care o facea mama vara. Poate tocmai de aceea este una dintre acele retete la care ma intorc mereu: simple, dar pline de gust si de amintiri.

kcalO reteta simpla de shakshuka cu oua in sos de rosii si ardei, perfecta pentru un brunch savuros in weekend. Se prepara intr-o singura tigaie, in aproximativ 30 de minute, si este un preparat satios, hranitor si plin de savoare.
Ingrediente
500 g rosii (aprox 6 rosii de marime medie)
o ceapa de marime medie
un catel de usturoi
o jumatate ardei capia, sau gras
2 linguri ulei de masline
1/2 lingurita chimion pudra
1 lingurita boia dulce
sare, piper, fulgi chilli dupa gust
100 g branza feta
1 avocado
patrunjel sau oregano
Instructiuni
- Se toaca ceapa si usturoiul marunt si se taie ardeiul in fasii sau cuburi potrivite. Daca se folosesc rosii proaspete, acestea se decojesc si se taie cubulete.
- Se incalzeste uleiul de masline intr-o tigaie adanca (de inox sau fonta emailata) la foc mediu. Se pun ceapa si usturoiul si se lasa sa se inmoaie pana devin translucide. Se adauga condimentele (chimionul, boiaua, fulgii de chilli) si se amesteca totul timp de 15-20 secunde pentru a se elibera aromele.
- Se toarna rosiile si ardeiul taiat in tigaie. Se reduce focul la mic, se pune un capac si se lasa sosul sa fiarba la foc mic timp de cel putin 20 de minute. Daca sosul devine prea gros, se pot adauga 2-3 linguri de apa. Spre final, se adauga praful de bicarbonat de sodiu pentru a se neutraliza aciditatea rosiilor.
- In timp ce sosul scade si devine cremos, se pregatesc ouale posate intr-o craticioara separata cu apa fierbinte, sare si putin otet. Se gatesc timp de 3 minute, astfel incat galbenusul sa ramana moale, dupa care se scot cu grija pe un prosop de hartie ca sa absoarba excesul de apa. (Daca preferi sa gatesti ouale direct in sos, fa 4 adancituri cu o lingura, sparge ouale si acopera tigaia cu un capac. Lasa pe foc 5-8 minute.)
- Odata ce sosul este legat si gata, se opreste focul tigaii. Se aseaza cu grija ouale posate direct in sosul fierbinte. Se presara deasupra branza feta sfaramata, bucati de avocado si patrunjelul tocat. Se serveste imediat alaturi de paine calda sau lipie.
