1 tablespoon vanilla extract
a pinch of salt
1/2 packet baking powder
- For the cream cheese filling
250 g ricotta cheese
2 teaspoons powdered sugar
1 teaspoon vanilla extract
- For the crumble topping
5 tablespoons all-purpose flour
100 g cold butter
1 teaspoon cinnamon
Directions
- Roast the pumpkin beforehand, then use the pumpkin puree for the muffin batter.
- Beat the eggs and sugar together until the mixture becomes lighter in color and doubles in volume.
- Add the oil and pumpkin puree, then mix until the pumpkin is finely incorporated into the batter.
