
Zilele trecute, o prietena „mi-a atras atentia” ca pe blog nu prea gaseste retete cu visine. Si, cum aceste fructe sunt preferatele mele, mi-am dat seama ca are dreptate. 😁 Asa s-a nascut aceasta reteta de mini tarte cu crema de vanilie, visine si bezea italiana.
Nu m-am hotarat din prima ce sa fac. Am trecut prin cateva idei pana am ajuns la combinatia asta, care mi s-a parut cea mai potrivita: mini tarte cu aluat fraged, crema de vanilie (preferata lui *le husband), un strat generos de fructe si, deasupra, bezea italiana. In plus, a fost si prima data cand am facut bezea italiana, deci am avut si eu emotiile mele. 😬 Dar rezultatul m-a convins ca reteta merita un loc pe blog.

Mi-a placut mult rezultatul. Aceste mini tarte au o baza frageda si usor crocanta, o crema fina si suficient de densa, iar visinele aduc exact aciditatea de care are nevoie un desert de genul acesta. Bezeaua italiana completeaza totul fara sa fie prea dulce, iar daca ai o torta de bucatarie, merita cateva secunde in plus pentru aspect si aroma usor caramelizata.
Daca esti in cautarea unei retete de mini tarte cu visine care sa fie echilibrata, fara sa fie exagerat de dulce, cred ca ai ajuns unde trebuie. Combinatia dintre aluatul fraged, crema de vanilie, visine si bezeaua italiana face ca fiecare element sa isi gaseasca locul fara sa il acopere pe celalalt.
De ce o sa-ti placa aceste mini tarte cu visine:
- Este un desert echilibrat. Crema de vanilie si bezeaua sunt dulci, dar visinele compenseaza foarte bine si nimic nu devine gretos.
- Arata foarte bine fara sa fie complicat. Chiar daca are mai multe componente, fiecare se face destul de usor daca urmezi pasii.
- Poate fi pregatit in etape. Cojile si crema se pot face cu o zi inainte, iar a doua zi doar asamblarea si bezeaua.
- O tehnica noua. Daca nu ai incercat pana acum bezeaua italiana, reteta asta e o ocazie buna. Nici eu nu o mai facusem si a iesit din prima.

Ingredientele principale pentru mini tartele cu crema de vanilie si visine:
- Unt rece (peste 80% grasime): pentru un aluat fraged care isi pastreaza forma la copt si ramane usor crocant.
- Galbenusuri, lapte si amidon de porumb: baza unei creme de vanilie fine si consistente.
- Vanilie: eu am folosit Pudra de Vanilie de Madagascar pentru ca nu aveam pastaie la indemana, dar poti folosi si pastaie sau pasta de vanilie.
- Visine: proaspete sau congelate. Le-am gatit cu putin zahar si un strop de zeama de lamaie pana au devenit un sos usor legat, cu un gust dulce-acrisor.
- Albusuri si sirop de zahar: din ele se obtine bezeaua italiana, care este foarte stabila si se potriveste perfect pentru decor.

Cum se pastreaza mini tartele
Mini tartele se pastreaza la frigider, intr-un recipient inchis ermetic, pana la 2-3 zile. Daca vrei ca aluatul sa ramana cat mai crocant, poti pregati cojile si crema din timp, iar bezeaua si asamblarea sa le faci chiar in ziua servirii.
Cojile de tarta se pot congela dupa coacere, iar crema de vanilie poate fi pregatita cu o zi inainte. Nu recomand congelarea tartelor deja asamblate, deoarece bezeaua isi pierde textura dupa decongelare.






💡Sfaturi utile
- Foloseste unt foarte rece pentru un aluat fraged.
- Daca aluatul pentru tarte nu se „aduna”, adauga o lingura de apa foarte rece.
- Nu fierbe crema mai mult decat este nevoie, altfel isi poate pierde textura fina.
- Intinde aluatul de tarta intre doua hartii de copt, o sa fie mult mai usor de desprins aluatul pentru a fi asezat in forme.
- Lasa tartele sa se raceasca complet inainte de a pune bezeaua.
- Daca ai o torta de bucatarie, foloseste-o pentru a carameliza usor bezeaua.

Daca iti plac deserturile cu visine, pe blog mai gasesti cateva retete pe care le fac aproape in fiecare vara. Fie ca folosesti visine proaspete sau congelate, toate sunt usor de pregatit si perfecte pentru sezon.

Ingrediente
- Pentru aluatul de tarte
300g faina
150g unt 82%
1 ou
50g zahar
1 lingurita esenta de vanilie
1 praf de sare
- Pentru crema de vanilie
500ml lapte
3 galbenusuri
100g zahar
40g amidon
1/2 lingurita pudra de vanilie
- Pentru sosul de visine
200g visine fara samburi
25g zahar
- Pentru bezea
100g albusuri (cele 3 albusuri de la oua)
200g zahar
60ml apa
Instructiuni
- Pregatirea aluatului de tarte
- Se cerne faina intr-un bol incapator, apoi se adauga praful de sare si zaharul.
- Se adauga untul rece taiat cubulete si se amesteca rapid cu varful degetelor sau cu un robot de bucatarie pana cand compozitia capata o textura nisipoasa.
- Se incorporeaza oul intreg, batut putin, si lingurita de esenta de vanilie, apoi se aduna rapid aluatul intr-o bila omogena, fara a framanta in exces pentru a pastra textura frageda.
- Se inveleste aluatul in folie alimentara si se lasa la frigider pentru cel putin 30-45 de minute.
- Se intinde aluatul intre hartii de copt, se decupeaza cercuri cu dimensiunea putin mai mare decat ale formelor de tarta, si se asaza in formele de mini tarte, presand bine marginile.
- Se pun formele cu aluat una peste alta si se baga in congelator aproximativ 30 minute, timp in care se incalzeste cuptorul la 180°C.
- Se inteapta baza tartelor cu o furculita cuptorul preincalzit la 180°C timp de 20 minute cu ventilatie (se verifica din cand in cand sa nu se inchida prea tare la culoare – tartele ar trebui sa fie aurii).
- Pregatirea cremei de vanilie
- Se pune laptele la incalzit intr-o craticioara, la foc mediu, impreuna cu pudra de vanilie, pana cand ajunge aproape de punctul de fierbere.
- Intr-un bol separat, se freaca cele 3 galbenusuri cu zaharul si amidonul pana cand compozitia se deschide la culoare si devine cremoasa.
- Se toarna laptele fierbinte in fir subtire peste amestecul de galbenusuri, amestecand continuu cu un tel pentru a tempera ouale.
- Se rastoarna intreaga compozitie inapoi in craticioara si se pune pe foc mic. Se amesteca energic si continuu pana cand crema se ingroasa si capata consistenta unei budinci fine.
- Se ia crema de pe foc, se transfera intr-un bol curat si se acopera imediat cu folie alimentara aplicata direct pe suprafata acesteia pentru a preveni formarea unei cruste. Se lasa sa se raceasca complet.
- Pregatirea sosului de visine
- Se pun cele 200g de visine fara samburi intr-o craticioara, impreuna cu cele 25g de zahar.
- Se lasa sa dea in clocot la foc mediu, amestecand din cand in cand, pana cand zaharul se dizolva complet, iar visinele isi lasa siropul si sosul incepe sa scada usor. Se ia de pe foc si se lasa la racit.
- Pregatirea bezelei italiene
- Se pun cele 60ml de apa si cele 200g de zahar intr-o craticioara la foc mediu pentru a forma un sirop. Pentru acest pas este nevoie de un termometru de bucatarie, siropul trebuie sa atinga temperatura de 118°C.
- In paralel, cand siropul ajunge pe la 110°C-115°C, se incep sa se bata albusurile spuma pana devin ferme.
- Cand siropul de zahar a atins 118°C, se toarna incet, in fir subtire, peste albusurile spuma, in timp ce mixerul merge la viteza mare.
- Se continua mixarea la viteza mare pana cand compozitia devine extrem de lucioasa, densa, formeaza varfuri foarte ferme, iar bolul se simte complet rece la atingere (aproximativ 8-10 minute).
- Asamblarea
- Se umple fiecare crusta de tarta racita cu o cantitate generoasa din crema de vanilie fina.
- Se adauga deasupra cremei un strat generos din sosul de visine.
- Se decoreaza mini tartele cu bezeaua italiana, folosind un poș cu dui sau o lingura pentru a crea un efect texturat cu valuri.
- Se foloseste o torta de bucatarie (arzator) pentru a flamba usor suprafata bezelei pana cand apar acele margini aurii si aspectul specific de cofetarie.
