  1. Roll the Sponge While It’s Still Warm – The secret to a crack-free Swiss roll is rolling the sponge as soon as it comes out of the oven. Turn it out onto a clean kitchen towel or a sheet of parchment paper lightly dusted with cocoa powder or powdered sugar, then gently roll it up and let it cool completely. This helps the sponge “remember” its shape, making it much easier to roll again once the filling has been added.
  2. Make the Salted Caramel with Patience – Melt the sugar over low heat and don’t rush the process. There’s no need to stir constantly, simply swirl the saucepan occasionally until the sugar melts evenly. When adding the butter and heavy cream, make sure they’re at room temperature to prevent the caramel from seizing. A rich chocolate Swiss roll inspired by the classic Snickers bar, filled with creamy cream cheese frosting, homemade salted caramel, and crunchy roasted peanuts. Perfect for holidays, celebrations, or whenever you’re craving an indulgent homemade dessert.

Ingredients

  • For the Chocolate Sponge
  • 5 large eggs

  • 90 g all-purpose flour

  • 30 g unsweetened cocoa powder

  • 100 g granulated sugar

  • 30 ml vegetable oil

  • 1 teaspoon vanilla extract

  • 1 tablespoon powdered sugar (for rolling)

  • For the Salted Caramel
  • 250 g granulated sugar

  • 200 ml heavy cream

  • 120 g unsalted butter

  • 150 g roasted salted peanuts

  • For the Cream Cheese Filling
  • 300 g Philadelphia cream cheese, softened

  • 50 g vanilla powdered sugar

  • 150 ml sweetened non-dairy whipping cream*

  • For the Chocolate Glaze
  • 200 g dark or semi-sweet chocolate, chopped

  • 40 ml coconut oil

  • 100 g roasted peanuts, chopped

  • *If sweetened non-dairy whipping cream isn’t available, you can substitute it with heavy whipping cream sweetened with powdered sugar.

Directions

  • Make the Chocolate Sponge
  • Separate the egg whites from the egg yolks. Beat the egg whites until foamy, then gradually add the sugar and continue mixing until stiff, glossy peaks form.
  • Lightly beat the egg yolks and gently fold them into the egg whites. Add the vegetable oil and vanilla extract, then sift in the flour and cocoa powder.
  • Using a spatula, gently fold the batter with upward motions until no streaks of flour remain. Be careful not to overmix, as you want to keep as much air in the batter as possible for a light, fluffy sponge.
  • Pour the batter into a parchment-lined baking tray and spread it evenly. Bake in a preheated oven at 180°C (350°F) for 10-12 minutes.
  • Once baked, let the sponge rest in the pan for 2 minutes, then dust the surface with powdered sugar. Carefully transfer it, together with the parchment paper, onto a clean kitchen towel and roll it up while it’s still warm. You can roll it from either the long or the short side – I rolled mine from the long side. Leave it rolled until completely cooled.
  • Make the Salted Caramel
  • Place the sugar in a saucepan over low heat and allow it to melt slowly, taking care not to burn it.
  • Add the butter and heavy cream, stirring until smooth. Simmer for about 10 minutes, then stir in the roasted salted peanuts. Set aside and let the caramel cool completely.
  • Make the Cream Cheese Filling
  • Place all the filling ingredients in the bowl of a stand mixer and beat until smooth, thick, and creamy.
  • Make the Chocolate Glaze
  • Melt the chocolate together with the coconut oil over low heat, stirring until smooth. Remove from the heat and stir in the chopped roasted peanuts.
  • Assemble the Swiss Roll
  • Before assembling, make sure all the components have cooled completely.
  • Carefully unroll the chocolate sponge and spread the salted caramel evenly over the surface. Top with the cream cheese filling, then roll the cake back up as tightly as possible.
  • Wrap the Swiss roll in plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  • Before serving, pour the chocolate glaze over the chilled Swiss roll and let it sit for a few minutes until the glaze begins to set.
