Dutch Baby Pancake Recipe (Easy Baked German Pancake)

Dutch Baby Pancake served with fresh blueberries, apricots and powdered sugar.

I’m a big pancake lover. Sweet, savory, plain, or filled, I can never say no to pancakes. But out of all of them, the Dutch Baby Pancake quickly became one of my absolute favorites.

I first made it out of curiosity, and before I knew it, I had baked it twice in the same week. That’s how good it is! I love how effortless it is to make, yet it looks so impressive straight out of the oven. The edges puff up beautifully while the center stays soft and custardy, making it the perfect base for fresh fruit, honey, maple syrup, or any toppings you love.

If you’re looking for an easy breakfast, a lazy weekend brunch, or a simple dessert that comes together with minimal effort, I’m pretty sure this Dutch Baby Pancake recipe will become one you’ll make again and again.

What Is a Dutch Baby Pancake?

Despite its name, the Dutch Baby Pancake didn’t originate in the Netherlands. It is an American recipe inspired by traditional German pancakes (Pfannkuchen). The name is believed to have come from a mispronunciation of the German word Deutsch, which eventually became Dutch.

Unlike classic pancakes that are cooked one at a time on the stovetop, a Dutch Baby is baked in a hot skillet. The batter is poured into a preheated pan, then the oven does all the work.

As it bakes, the edges rise dramatically and turn golden and lightly crisp, while the center stays soft and custardy. It’s this contrast in texture that makes a Dutch Baby Pancake so unique and perfect for both sweet and savory toppings.

Tips for the Perfect Dutch Baby Pancake

This recipe is incredibly easy to make, but a few simple tips will help you achieve those beautifully puffed edges every time.

  • Use an oven-safe skillet. A 10-inch (24 cm) cast iron or stainless steel skillet works best because it retains heat exceptionally well, helping the pancake rise evenly.
  • Make sure the skillet is piping hot. I place mine in the oven while it preheats. When you add the butter, it should sizzle immediately. That’s your cue to pour in the batter.
  • Bring the ingredients to room temperature. Room-temperature eggs and milk blend more easily and help the batter puff up beautifully in the oven. It’s not essential, but it does make a noticeable difference.

Topping Ideas for Your Dutch Baby Pancake

This is my favorite part because you can make it exactly the way you like.

For this version, I kept things simple with fresh blueberries, apricots, and a light dusting of powdered sugar. I wanted the fresh fruit to be the star of the plate.

If you’re in the mood for something a little sweeter, try drizzling it with honey and topping it with sliced bananas and chopped walnuts. Whenever I can, I use honey from my dad’s beehives, and it really makes a difference.

For a classic combination, you can never go wrong with maple syrup, a little melted butter, and a sprinkle of cinnamon.

And if you’re craving something extra indulgent, spread it with Nutella or drizzle it with salted caramel sauce, then finish it off with a handful of fresh strawberries.

No matter which toppings you choose, you’ll have a beautiful breakfast, brunch, or dessert on the table in under 30 minutes.

Frequently Asked Questions

Why did my Dutch Baby Pancake deflate after baking?

Don’t worry, this is completely normal. A Dutch Baby Pancake puffs up dramatically in the oven, then naturally settles as it cools. The edges usually stay tall and golden, while the center deflates slightly, creating its signature look.

Can I make the batter ahead of time?

Yes! You can prepare the batter the night before and keep it covered in the refrigerator. Before baking, let it sit at room temperature for 15–20 minutes and give it a quick whisk before pouring it into the hot skillet. This will give it the best chance to puff up beautifully in the oven.
