I had several attempts at making classic American-style chocolate chip cookies before getting the texture I was looking for. Some were too crumbly, others too dense. They all had chocolate in them, so clearly that wasn’t the problem. 😄
After reading through more recipes, I realised I needed two things: kitchen scales to measure the ingredients properly, and enough patience to leave the dough in the fridge overnight. The scales were easy enough. The patience took a little more effort.
That’s how these chocolate pretzel cookies came about. After all that time trying to get a classic cookie right, I still couldn’t resist changing things a little. I added dark chocolate chunks and salted pretzels for a combination of lightly crisp edges, soft centres and crunchy pieces throughout.
I made the dough in the evening and switched the oven on almost as soon as I opened my eyes the next morning. So yes, I waited overnight. Let’s not give me too much credit for patience, though. 😁
What salted pretzels bring to these cookies
The pretzels do more than make the cookies look pretty. The broken pieces running through the dough add crunch and little salty bites alongside the dark chocolate. A whole pretzel on top gives you a fairly good idea of what to expect before you even take a bite.
You’ll need small, crisp salted pretzels for this recipe: the sort sold in bags for snacking. Their dry, crunchy texture is part of the combination, so soft bakery pretzels aren’t what we’re using here.
Dark chocolate brings a rich cocoa flavour that works well with the sweet dough. Then you get the occasional piece of pretzel, which changes both the taste and the texture. There’s plenty going on without adding a filling, icing or another layer of chocolate.
If you enjoy sweet and salty desserts, these cookies bring those flavours together in a particularly straightforward way. The salt is already present in several parts of the recipe, though, so stick to the suggested amounts rather than adding an extra generous sprinkle just because the combination sounds good.

Getting the texture right starts with weighing the ingredients
After my earlier attempts at cookies that were either too crumbly or too compact, kitchen scales became an important part of the process. When texture is what you’re trying to get right, measuring ingredients accurately gives you a much better starting point.
This is especially useful the first time you make the recipe. An extra spoonful of flour might seem harmless, but adding ingredients by eye makes it harder to reproduce the same result.
The dough uses a mixture of plain flour and pizza flour. That combination belongs to the version I made, so I wouldn’t describe replacing either one as a change that will have no effect on the finished cookies.
For your first batch, my suggestion is to keep to the original combination and quantities. That way, you can judge the result from a clear starting point. Changing several ingredients at once makes it much harder to work out why the cookies have turned out differently.

Why I leave the cookie dough in the fridge overnight
I know. When you fancy cookies, being told to wait until tomorrow is hardly the most exciting part of a recipe.
But the overnight rest has a purpose. Chilling firms up the fat in the dough, helping to control how much the cookies spread in the oven. Resting also gives the flour time to absorb moisture. That helps explain why freshly mixed dough can behave differently from dough that has spent time in the fridge.
My solution was to split the baking between the evening and the following morning. Conveniently, most of the waiting happened while I was asleep. I can’t claim this made me a more patient person, but it did make the wait considerably easier. 😅
It’s worth planning for that pause before you start. This is a recipe to begin ahead of time, with the baking saved for the next day. And waking up knowing that cookie dough is already waiting in the fridge is quite a nice arrangement.

How to keep the centers soft
The important thing to watch during baking is the difference between the edges and the middle. The edges should be turning golden while the centres still look soft and a little underdone.
If you wait until the whole cookie looks evenly browned and firm, you risk losing the softer centre. Use the appearance of the cookies alongside the baking time in the recipe card, rather than expecting them to look completely set before you take them out.
Keeping the dough portions a similar size also helps. A tray of evenly sized cookies is easier to judge than one with a mixture of small and large portions, where some may be ready well before others.
Give them room on the baking tray, too. These cookies spread as they bake, so leave space between the dough portions instead of squeezing them together.
Once they come out of the oven, resist the temptation to lift one straight away. They’re still delicate at that stage and need a little time on the tray before being moved. A cookie that breaks when it’s piping hot hasn’t necessarily gone wrong; it may simply need that short cooling period.

Serving chocolate pretzel cookies
A simple coffee works well alongside these cookies, leaving the dark chocolate and salty pretzels to do their thing. A glass of milk is another option, or you can put them on a plate for everyone to help themselves.
They already have their own decoration, thanks to the pretzel on top, so there’s no need to make serving them complicated.
If you’re taking them somewhere, let them cool completely before packing them. Choose a container with enough room to avoid crushing the edges or knocking off the pretzels. They’re large cookies, so giving them a little breathing space is more useful than trying to fit every last one into the smallest possible tin.
Frequently asked questions
Can I use chopped chocolate instead of chocolate chips?
Yes. Chopped dark chocolate is what I used in this recipe. You don’t need special baking chips to make these cookies.
Are the pretzels just for decoration?
No. Broken pretzel pieces are mixed into the dough as well. Those pieces contribute to the flavour and texture, while the whole pretzel on top makes the combination easy to recognise.
Can I bake the dough straight away?
For the result described here, keep the overnight rest in the fridge. I haven’t tested a version without that chilling time that I can recommend as an equivalent.
Why do the cookies break if I move them straight after baking?
They’re still soft and fragile when they come out of the oven. Leave them on the baking tray for five minutes before transferring them to a wire rack. This gives them time to firm up enough to move without falling apart.

kcalLarge cookies with lightly crisp edges, soft centers, dark chocolate chunks and crunchy salted pretzels. The dough rests in the fridge overnight before baking.
Ingredients
225 g butter, 80% fat, at room temperature
1 egg
160 g brown sugar
110 g caster sugar
1 tsp vanilla extract
⅓ tsp salt
175 g plain flour
150 g pizza flour
1 tsp baking soda
150 g dark chocolate, chopped
30 small salted pretzels, for the dough
15 small salted pretzels, for decorating
Approximately ½ tsp sea salt flakes, for sprinkling
Directions
- Beat the butter, brown sugar and caster sugar together in a bowl using an electric mixer for 3–5 minutes.
- Add the egg and vanilla extract and beat until combined.
- In a separate bowl, mix the plain flour, pizza flour, baking soda and salt.
- Gradually add the dry ingredients to the butter mixture, mixing on a low speed just until the flour is incorporated. The dough should be firm.
- Break the 30 pretzels into pieces. Fold them into the dough with the chopped dark chocolate, using a spoon or spatula to distribute them evenly.
- Use an ice cream scoop to divide the dough into 15 balls and place them on a tray lined with baking parchment.
- Press a whole pretzel onto each dough ball and sprinkle with a little sea salt. Refrigerate overnight.
- Preheat the oven to 170°C / 340°F. Arrange the chilled dough balls on a baking tray lined with baking parchment, leaving plenty of space between them to allow for spreading.
- Bake for approximately 15 minutes, until the edges are starting to turn golden and the centers still look soft and slightly underdone.
- Leave the cookies on the baking tray for 5 minutes, then carefully transfer them to a wire rack to cool completely.
Note
- The estimated 330 kcal per cookie is based on a batch of 15 cookies, including the pretzel topping. The calculation assumes approximately 60 g of pretzels in total and dark chocolate with 70% cocoa solids. Actual values will vary depending on the ingredients used, the weight of the pretzels and the size of the cookies.
