Today marks one week since I bought my waffle maker from KitchenShop, and what better way to celebrate than with a new waffle recipe? 😂 This time, I made cottage cheese and Greek yogurt waffles with a higher protein content. 💪

I had this waffle maker on my wishlist for about a year, and as luck would have it, I received an email last week announcing that it was on sale. I immediately reserved one at the store to make sure I would find it there, and as soon as the mall opened, I was there to pick it up, very excited. 😁

Since then, not a single day has gone by without me making a new waffle recipe, much to *le husband‘s despair. 😅 I started with the classic Belgian waffle recipe that everyone knows, just to test the waffle maker, and then I started combining ingredients and creating my own recipes.

And that’s how these cottage cheese and Greek yogurt waffles came to be. Besides being delicious and easy to make, the ingredients give these waffles a higher protein content, making them a great option for a more filling breakfast.

Tips for Perfect Cottage Cheese Waffles

Don’t overmix the batter. Once all the ingredients are incorporated, that’s enough. We don’t want to lose all the air incorporated into the eggs.

If you’re not using a smart waffle maker that lets you know when the waffles are ready, don’t open the waffle maker too soon. If you lift the lid before the batter is sufficiently cooked, the waffle may break apart or stick to the plates.

Fluffy cottage cheese and Greek yogurt waffles with a higher protein content. A simple and delicious option for a satisfying breakfast.

Ingredients

  • 3 eggs

  • 50 g sugar

  • 20 ml melted coconut oil

  • 100 g all-purpose flour

  • 100 g cottage cheese

  • 150 g Greek yogurt, 2% fat

  • 50 ml milk

  • 1 teaspoon vanilla extract

  • 3 g baking powder

Directions

  • Beat the eggs and sugar until doubled in volume and the sugar has dissolved.
  • Add the coconut oil, cottage cheese, Greek yogurt, milk, and vanilla extract and mix briefly until combined.
  • Add the flour and baking powder and mix just until a smooth batter forms. Avoid overmixing to preserve the air incorporated into the eggs.
  • Preheat the waffle maker and grease it if necessary.
  • Pour the batter into the waffle plates and cook until the waffles are nicely golden brown.
  • Repeat until all the batter has been used.
