I discovered blondies quite recently and I have to admit that the first thing that caught my attention was their name. I wasn’t really convinced that a dessert without chocolate could be interesting enough for me, but after a few searches, I discovered that blondies are actually incredibly versatile and can be adapted into so many delicious combinations.
The first version I tried was the coffee and chocolate one, a combination that never fails in my opinion. The intense coffee flavor paired with dark chocolate creates a perfectly balanced dessert, while the white chocolate pieces add extra sweetness and a lovely texture.
I have made this recipe several times for different occasions, and it has been appreciated every single time. It is the kind of dessert you can quickly prepare when you are craving something sweet but don’t want to spend too much time in the kitchen.
These blondies have slightly crisp edges and a soft, moist center, with a rich coffee aroma and plenty of chocolate. They are basically the lighter, “blonder” cousin of the classic brownie, just as delicious, but with their own unique personality. 😁

What are blondies?
Blondies are often considered the “blonde” version of classic brownies. The main difference is that they do not contain cocoa powder in the batter, and their signature flavor comes mainly from butter, brown sugar, and vanilla.
Their texture is somewhere between a cake and a soft cookie: they have slightly crisp edges and a dense yet tender center. Although the basic recipe is simple, blondies can easily be customized by adding chocolate, nuts, caramel, or different flavorings.
Why you’ll love this chocolate coffee blondies recipe
- it’s very easy to make and doesn’t require any complicated ingredients;
- the combination of coffee and chocolate creates a rich and intense flavor;
- it has the perfect texture: slightly crisp on the outside and soft in the center;
- it’s ready in less than an hour;
- it’s the perfect dessert to enjoy with a good cup of coffee.
Tips for the best blondies
- Use room temperature ingredients, especially the egg and egg yolk. The batter will come together more easily.
- Don’t overmix the batter after adding the flour. The less the batter is worked, the more tender the final texture will be.
- Don’t overbake the blondies. The secret to the perfect texture is a slightly soft and moist center.
- Don’t skip the coffee. Espresso enhances the chocolate flavor, so I wouldn’t recommend leaving it out of the recipe.
How to store blondies?
Blondies keep very well in an airtight container at room temperature for several days.
Their texture actually becomes even better after they have completely cooled, as the center remains dense and slightly moist.
You can warm them up for a few seconds before serving if you enjoy that freshly baked, just-out-of-the-oven texture.
