Baked Chicken Breast with Vegetables and Cheese – High-Protein Recipe

Baked chicken breast with spinach, red peppers, ricotta-style cheese and melted cheese, served on a plate

I love recipes that don’t require spending too much time in the kitchen, especially those that go into the oven and practically cook themselves. 😀 This baked chicken breast with vegetables and cheese is exactly the kind of meal I make when I want something delicious, filling, and high in protein without too much effort.

A lot of the time, my cooking inspiration comes straight from the fridge. I check what ingredients I have on hand and try to come up with something tasty. Not every experiment turns out exactly as planned (it happens! 😁), but this one was definitely a success.

The chicken breast pairs really well with the vegetables, the fresh cheese adds a lovely creamy texture, and the melted cheese on top brings everything together. The result is a colorful, satisfying meal that’s perfect for lunch or dinner.

Why You’ll Love This Recipe

First of all, it’s simple and doesn’t require any fancy ingredients. You can also easily swap the vegetables depending on what you already have in your fridge, so there’s no need for an extra trip to the grocery store.

Another reason I love this recipe is that it’s naturally high in protein, thanks to the combination of chicken breast and cheese. It’s a filling meal with plenty of vegetables, making it a great option when you want something a little more balanced.

And, of course, there’s the melted cheese on top. I think that’s one of the best parts of the whole dish. 😁

Tips for Juicy and Tender Baked Chicken Breast

Don’t overcook the chicken. Chicken breast is quite lean, so it can dry out quickly. In this recipe, the chicken is lightly browned in a pan before going into the oven, so there’s no need to cook it all the way through during the first step.

Watch out for excess moisture from the vegetables. Mushrooms, tomatoes, and spinach release water as they cook. If you notice too much liquid in the pan, let some of it evaporate before transferring everything to the baking dish. This will prevent the finished dish from becoming too watery.

Choose a cheese that melts well. You don’t need a huge amount, just enough to lightly cover the vegetables and create a delicious golden topping. Mozzarella, Gouda, or a mild cheddar would all work well.

Cut the chicken into evenly sized pieces. This helps everything cook at the same rate, so you don’t end up with some pieces that are dry while others are still undercooked.

What Can You Use Instead of Urda Cheese?

I originally made this recipe with urda, a traditional Romanian fresh whey cheese, simply because that’s what I had in my fridge. It has a mild flavor and a soft texture that works really well with the vegetables.

If you can’t find urda, ricotta is probably the closest and easiest substitute. It has a similarly delicate flavor and creamy texture, making it a great choice for this baked chicken recipe.

You can also use well-drained cottage cheese. The texture will be slightly different, but it works just as well.

Feta is another option if you prefer a stronger, saltier flavor. Just remember to reduce the amount of salt you add to the dish.

What Other Vegetables Can You Add?

One of the best things about this baked chicken breast with vegetables is that you don’t have to stick to the exact same combination every time.

I used spinach, mushrooms, cherry tomatoes, and red peppers, but you could also add zucchini, broccoli, or even a few pieces of eggplant.

Just keep in mind that different vegetables have different cooking times. Broccoli, for example, might need a little extra time, while zucchini tends to release quite a bit of water.

If you’re using frozen vegetables, I’d recommend cooking off or draining any excess moisture before adding them to the baking dish.

Personally, I really like the combination of spinach and mushrooms, while the cherry tomatoes add a little sweetness and freshness.

What to Serve with Baked Chicken Breast and Vegetables

For me, this dish is filling enough to enjoy on its own, especially since it already contains plenty of vegetables.

If you want something a little more substantial, you can serve it with steamed rice, roasted potatoes, or even a slice of fresh bread.

It also goes really well with a simple green salad dressed with a little lemon juice.

And if you’re looking for another high-protein meal idea, you can enjoy it as it is or pair it with homemade protein flatbread.

Frequently Asked Questions

Can I make this baked chicken recipe ahead of time?

Yes! You can prepare the chicken and vegetables ahead of time and keep them refrigerated until you’re ready to finish cooking everything in the oven.

If the ingredients are cold when they go into the oven, they may need a little extra cooking time.

Just make sure the chicken is fully cooked before serving. The internal temperature should reach 165°F (74°C).

How long does baked chicken with vegetables last in the fridge?

Once cooked, this dish can be stored in an airtight container in the refrigerator for 3–4 days, provided it has been cooled and stored properly.

You can reheat it in the oven or microwave until it’s heated all the way through.

Can I use chicken thighs instead of chicken breast?

Absolutely! Boneless, skinless chicken thighs work well in this recipe too.

They’re slightly higher in fat than chicken breast, but they tend to stay juicy and tender during cooking.

Just adjust the cooking time depending on the size and thickness of the pieces.

Can I make this recipe without the melted cheese topping?

Of course! The melted cheese adds extra flavor and creates a lightly golden topping, but the recipe will still work without it.

The fresh cheese will provide most of the creaminess, although the final texture will be a little different. The protein content will also be slightly lower.

Can I use frozen spinach instead of fresh spinach?

Yes, frozen spinach works too. Just make sure to thaw it and squeeze out as much excess water as possible before adding it to the dish.

This helps prevent the baked chicken from becoming watery.
