If it’s Sunday, it’s treat day. 😁 And what better way to start the day than with dessert for breakfast? 😊
I might regret that decision at the gym tomorrow, but sometimes breaking the rules just feels good. 😁
Today’s treat is an easy apple upside-down cake with caramelized apples and a light, fluffy sponge. Some of the best cakes are also the simplest, and this is definitely one of them. 😊
You get a generous layer of soft, caramelized apples and a fluffy vanilla sponge that soaks up some of those delicious juices as it bakes. And the best part comes at the end, when you flip the cake over and reveal that beautiful caramel apple topping.
It’s one of those classic, uncomplicated recipes that doesn’t need layers of frosting or a long list of ingredients to be delicious. And it’s especially perfect in the fall, when apples are everywhere and apple baking season is officially back. 😁
Why You’ll Love This Apple Upside-Down Cake
First of all, apples and caramel. It’s hard to go wrong with that combination. The apples soften as they bake and create a sweet, slightly sticky caramelized topping.
Then there’s the sponge cake. It’s simple, light and fluffy, but once the cake is inverted, it absorbs some of the caramel and juices from the apples. The result is a soft cake that doesn’t need any frosting or filling.
And finally, I love that this cake looks beautiful without much effort. No elaborate decorating required—the caramelized apples do all the work. 😊

What Are the Best Apples for Apple Upside-Down Cake?
For this recipe, I recommend using apples that hold their shape fairly well when baked and have a little tartness to them. The contrast between slightly tart apples and sweet caramel works much better than using an overly sweet variety.
Granny Smith, Braeburn, Pink Lady or Honeycrisp are all good options.
Try not to slice the apples too thinly, either. You want them to become soft and caramelized while still keeping some texture once the cake is sliced.
Tips for the Perfect Apple Upside-Down Cake
Don’t burn the caramel. This is probably the most important part of the recipe. You want a beautiful golden caramel. If it becomes too dark, it can taste bitter.
Be very careful when coating the pan with caramel. Melted caramel is extremely hot, so handle the pan carefully.
Don’t overmix the sponge cake batter. Once the egg whites have been whipped, you want to keep as much air in the batter as possible. Fold the remaining ingredients in gently to keep the sponge light and fluffy.
Don’t let the cake cool completely before flipping it. As the caramel cools, it begins to set, which can make the cake more difficult to release from the pan.
And use a serving plate or cake stand that’s slightly larger than your baking pan. It seems like a tiny detail until it’s time for the big flip. 😁
How to Serve Apple Upside-Down Cake
I love this cake just as it is. With caramelized apples, vanilla sponge and caramel, it really doesn’t need anything else.
But if you want to turn it into an extra-special dessert, serve it slightly warm with a scoop of vanilla ice cream. Warm apple cake and cold vanilla ice cream are pretty hard to resist. 😁
A little unsweetened whipped cream also works beautifully, or you can add a light dusting of cinnamon before serving.
How to Store Apple Upside-Down Cake
Once completely cooled, keep the cake well covered to prevent it from drying out.
The apples add plenty of moisture, and I actually think this cake gets even better after it has had a little time to sit and all those flavors have come together.
If you store it in the refrigerator, let it come closer to room temperature before serving. You can also gently warm individual slices, especially if you’re serving them with vanilla ice cream.

Frequently Asked Questions
Why did my upside-down cake stick to the pan?
This usually happens when the cake is left in the pan for too long after baking and the caramel starts to set. The cake is easier to release while it is still slightly warm.
Can I make apple upside-down cake in a springform pan?
I would avoid using a pan that isn’t completely leakproof. The caramel can leak out during baking, so a regular cake pan or another solid, oven-safe baking dish is a safer choice.
Can I add cinnamon?
Absolutely. Apples and cinnamon are a classic combination. You can sprinkle a little cinnamon over the apples if you like, without adding so much that it overpowers the caramel and vanilla flavors.
Can I make apple upside-down cake a day ahead?
Yes. This cake keeps well and is a great make-ahead dessert. Once it has cooled completely, keep it covered until you’re ready to serve.
Can I use other fruits?
Yes. The upside-down cake method works beautifully with other fruits that hold up well during baking. Pears, plums and peaches are a few variations I’d try.

kcalAn easy apple upside-down cake with soft caramelized apples and a light, fluffy vanilla sponge. The apples and caramel create a delicious, slightly sticky topping that pairs perfectly with the airy sponge cake.
Ingredients
- For the Caramelized Apples
1 cup sugar
5 apples
- For the Sponge Cake
6 eggs
6 tablespoons sugar
6 tablespoons all-purpose flour
1 packet baking powder
1 teaspoon vanilla extract
Directions
- Preheat the oven to 400°F (200°C).
- Add 1 cup of sugar to an approximately 8-inch (20 cm) round baking pan or oven-safe dish. Melt the sugar over low heat until completely dissolved and golden in color. Carefully tilt the pan to coat the bottom and sides with the caramel.
- Wash, peel and thinly slice the apples. Arrange the apple slices over the caramel, then place the pan in the preheated oven and bake for about 20 minutes.
- Meanwhile, prepare the sponge cake batter. Separate the egg whites from the yolks. Beat the egg whites with the 6 tablespoons of sugar until light and fluffy.
- Add the egg yolks, flour, baking powder and vanilla extract. Gently fold everything together with a spatula, using upward folding motions to keep as much air in the batter as possible.
- Remove the apples from the oven and spread the sponge cake batter evenly over them.
- Reduce the oven temperature to 320°F (160°C) and bake for approximately 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it rest in the pan for a few minutes. Carefully invert it onto a serving plate in one smooth motion.
- Allow the cake to cool before slicing and serving.
