Healthy desserts have always been a bit of a challenge for me. A moist and flavorful apple oat bread made with apples, oats, nuts and cinnamon, with no added sugar and no white flour. A simple and delicious option for a sweet snack.

Ingredients

  • 12 tbsp rolled oats

  • 3 small eggs or 2 large eggs

  • 100 ml kefir or yogurt

  • 1/2 tsp ground cinnamon

  • 3 apples

  • 2 tbsp honey

  • A handful of mixed almonds and walnuts, or hazelnuts, cashews, etc.

  • A pinch of salt

  • A few drops of almond extract

  • Optional: 7 g dark chocolate with 99% cocoa content

Directions

  • Grind the oats using a food processor. Add the mixed nuts and almonds and process for a few more seconds, just enough to leave some slightly larger pieces.
  • Peel the apples and cut them into cubes. Set one apple aside for decoration.
  • Finely chop the chocolate with a knife.
  • Crack the eggs into a bowl, add the remaining ingredients and mix everything together with a spoon.
  • Pour the batter into a loaf pan and arrange the reserved apple pieces on top.
  • Place the pan in a preheated oven at 180°C (350°F) and bake for approximately 45 minutes. Check for doneness with a toothpick. The apple oat bread is ready when the apple pieces on top have turned golden.
