Chicken breast is one of those ingredients I almost always have in my fridge. And since I cook it so often, I sometimes feel like I’ve already tried every possible way to prepare it. 😀
This time, I made oven-baked chicken skewers with colorful vegetables and a fresh orange juice marinade. It was a combination I hadn’t tried before, and I was pleasantly surprised by how tender and juicy the chicken turned out.
For the longest time, I associated chicken skewers with summer barbecues and outdoor grilling. It honestly never occurred to me to make them in the oven, even though they’re incredibly easy to prepare.
Turns out, you don’t need a grill to enjoy delicious chicken skewers. 🙂
Why You’ll Love These Oven-Baked Chicken Skewers
What I enjoyed most about this recipe was the combination of tender chicken and lightly roasted vegetables.
The fresh orange juice gives the chicken a subtle citrus flavor without making it sweet, while the vegetables add color, texture, and plenty of flavor.
These baked chicken skewers are also a great alternative to your usual roasted chicken breast when you want something a little different without spending too much time in the kitchen.
The only part that requires a bit of patience is letting the chicken marinate. After that, the oven does most of the work.

How to Keep Chicken Breast Skewers Tender and Juicy
Chicken breast can dry out pretty quickly if it’s overcooked, especially when cut into smaller pieces.
For this recipe, I used a simple marinade made with fresh orange juice and olive oil. It adds a lovely, slightly citrusy flavor to the chicken. The acidity of the orange juice can also affect the surface texture of the meat, although the key to keeping chicken juicy is not overcooking it.
I let the chicken marinate for about five hours, and I was really happy with the result.
I wouldn’t skip the marinating step, even though the skewers themselves take very little time to put together.
Tips for Making the Best Chicken Skewers in the Oven
Cut the chicken into evenly sized pieces. This helps everything cook at the same rate, so you don’t end up with some pieces drying out while others are still undercooked.
Choose vegetables that roast well. Bell peppers, red onion, mushrooms, and cherry tomatoes work really well together. Using different colors also makes the skewers look much more appetizing.
Don’t overcrowd the skewers. Leave a little space between the chicken and vegetables so the hot air can circulate and everything cooks more evenly.
Keep an eye on the cooking time. Every oven is different, and the broiler can brown food quite quickly. Check the skewers toward the end to avoid drying out the chicken. For food safety, the internal temperature should reach 165°F (74°C).
If you’re using wooden skewers, make sure they’re suitable for oven use and keep them away from the broiler’s heating element. Metal skewers are also a great option.
What to Serve with Chicken Skewers
One of the things I like about recipes like this is how versatile they are. You can serve these chicken and vegetable skewers with a simple side dish or just a fresh salad, depending on how hungry you are.
They pair really well with rice, roasted potatoes, or a fresh tomato and cucumber salad.
If you prefer something a little lighter and more refreshing, a simple Greek yogurt sauce with garlic and a squeeze of lemon would be lovely.
Personally, I’d keep the sides fairly simple so they don’t overpower the subtle orange flavor of the chicken.

Frequently Asked Questions
Can I cook these chicken skewers on the grill instead?
Absolutely! This recipe works well on an outdoor grill, too. Just adjust the cooking time depending on the size of the chicken pieces and the heat of your grill.
Can I use chicken thighs instead of chicken breast?
Yes! Boneless, skinless chicken thighs are a great alternative, especially if you prefer slightly juicier meat.
Keep in mind that the cooking time may vary, so make sure the chicken is fully cooked before serving.
How long should I marinate chicken skewers?
For this recipe, I marinated the chicken for about five hours.
You can try a shorter marinating time, but I’d recommend at least two hours to give the flavors a chance to develop.
Always keep the chicken refrigerated while it marinates.
Can I prepare chicken skewers ahead of time?
Yes! You can marinate the chicken in advance and chop the vegetables separately, so all you have to do is assemble the skewers when you’re ready to cook.
If you’re preparing everything the day before, I’d keep the chicken and vegetables separate. I’d also avoid leaving the chicken in the orange juice marinade for too long, as the acidity can eventually affect its texture.
How do I store leftover chicken skewers?
Cooked chicken skewers can be stored in an airtight container in the refrigerator for 3–4 days, provided they’ve been cooled and stored properly.
You can reheat them in the oven or in a skillet. Just be careful not to overcook them, as chicken breast can become dry when reheated.
