- For the muffins
4 eggs
100 g melted butter
150 ml sunflower oil
9 tablespoons all-purpose flour
7 tablespoons granulated sugar
100 ml fresh orange juice (about the juice of 1 medium orange)
1 teaspoon freshly grated orange or lemon zest
1 packet baking powder
- For the vanilla cream
500 ml milk
3 tablespoons granulated sugar
1 tablespoon vanilla sugar
2½ tablespoons cornstarch
4 egg yolks
1 teaspoon vanilla extract
- For decoration, optional

Directions
- Make the vanilla cream
- Heat the milk until just before it reaches a boil, then remove it from the heat.
- In a bowl, beat the egg yolks with the sugar and vanilla sugar until the mixture becomes lighter in color.
- Add the cornstarch and whisk until well combined.
- Gradually pour the warm milk into the egg yolk mixture, whisking constantly to prevent lumps from forming.
- Transfer the mixture to a saucepan and cook it over a double boiler, stirring occasionally.
- Once the cream reaches a pudding-like consistency, remove it from the heat and stir in the vanilla extract.
- Leave the cream to cool, stirring occasionally to prevent a skin from forming.
- Make the muffins
- Beat the eggs and sugar until doubled in volume and the sugar has dissolved.
