Easy No-Bake Healthy Brownie Bites with Sea Salt

120 g smooth, unsweetened peanut butter/cream
85 g honey
20 g cocoa
60 g almond flour
60 g oat flour
1 tablespoon vanilla extract
1/2 teaspoon instant coffee
- Glaze
120 g dark chocolate chips (54.5%)
1 teaspoon coconut oil
sea salt
Directions
- Gently warm the peanut butter until it becomes fluid and runny. You can easily do this in the microwave or using a double boiler (bain-marie).
- Add all the remaining brownie ingredients and mix with a spatula until a smooth, cohesive dough forms.
- Transfer the mixture into a 20x20cm (8″) pan lined with plastic wrap, or press it into a silicone mold with rectangular cavities (I personally chose the silicone mold option).
- Place in the refrigerator and let it chill for 2–3 hours to firm up.
- Once chilled, slice into bite-sized squares if you used a baking pan, or simply pop them out of the silicone mold.
- Melt the dark chocolate along with the coconut oil using a double boiler (bain-marie), then dip each brownie bite, one by one, into the melted chocolate glaze.
- Transfer the coated bites onto a tray lined with parchment paper and sprinkle a few flakes of sea salt right on top of each one.
- Place the tray back in the fridge for 15–20 minutes before serving, just until the chocolate shell sets completely.
