Ingredients
2 medium eggplants
2 large red peppers (pointed/capia or red bell peppers)
1 medium onion
about 4–5 tablespoons sunflower oil (or neutral oil)

Directions
- Wash the eggplants and peppers. Place them on a baking sheet lined with parchment paper and roast under the grill/broil setting at 250°C / 480°F.
- Turn the vegetables occasionally so they roast evenly on all sides.
- The peppers are ready in about 20 minutes. Remove them and let cool. The eggplants need about 20 minutes longer. Once cool enough to handle, peel the eggplants and remove the stems. Peel the peppers and remove the seeds.
- Place everything in a colander to drain for a few minutes, then finely chop (or mash) together.
- Peel and wash the onion, then grate it on the fine side of a grater.
- In a bowl, combine the chopped eggplant and peppers, grated onion, salt, and oil. Mix with a wooden spoon for 1–2 minutes until well combined and creamy.
